Chicken Marsala over Fettuccine - Super Yum!

The whole week was a racing blur.

Then Friday until races starting Hambo day a blur, just swamped with studying.

Then the races, at this point I just just OD on it, made a quick cheese on rye sandwich and drank water and coconut water, and snacked on some cherries all Saturday.

Cooking is therapeutic for me, and the eating part the nourishment and pleasure, and this dish I made was just amazing, I'm going to have to eat it at least a few times a month and wanted to share.  Was a good racing week and no matter what we're always deserving of a great meal - and I share my food so I make a bountiful amount! 

Not a whole bunch of ingredients and what a treat:

4-5 lbs of boneless, skinless chicken breasts
12 oz Panko bread crumbs
3 eggs
24 oz Portobello mushrooms
1/4 teaspoon of each onion and garlic powder
2 tablespoons of flour
2 lbs of fettuccine
2 sticks unsalted sweet cream butter
16 oz chicken broth
16 oz Marsala wine
16 oz heavy cream
8 oz cup olive oil
Fresh Italian Parsley

(Makes 8 huge servings)

Cut your 4 chicken breasts the long way so they are thin and are now 8.
Pound them both sides with the tenderizer hammer.
Batter then with egg, then panko and place in frying pan on med/high


Wash and saute your mushrooms, place in frying pan with stick of butter
When mushrooms done add cream, wine, and chicken broth
Add seasonings
Let simmer for 30 min and add flour and stir for couple of minutes
Turn off and add a few teaspoons of shavings of the fresh Italian parsley

Cook your fettuccine, when done colander off in cold water
Throw stick of butter in hot pot used to cook fettuccine
Then throw back in the fettuccine and stir

Plate the fettuccine, pour the Marsala mushroom sauce generously, and place chicken cutlet on top and add more sauce on top of the cutlet!  Notice how there is no salt, doesn't need it, but if you're a salt eater then add.

Sounds great.
If I can't cook it in the microwave or air fryer I probably won't make it.

I have an air fryer still in the box and I'm an avid cook. ngc3

The chicken you can do in the air fryer.  Mushrooms too probably.

The rest is sauce and pasta, pretty easy.  I've never done it in a microwave but possibly can be done.

If you do the cutlets, then you can do chicken - parmesan , franchese, anything.  The tenderizing is easy, and you don't even need a knife to cut your cutlets.  ;D

I am a big Pasta lover! But I'm watching my carbs. So for me it would be the chicken Marsala over veggies. With a glass of Barolo.

I like to make chicken piccata once in a while. I should try the marsala as I've had it at a restaurant and enjoyed it. Thanks for your recipe

I think it's the mushrooms and the Marsala wine make it, the rest of the dish is generic.

Chicken Piccata and another of my favorites, Francese related dishes.

While I'm not a salt eater, anchovies, capers ( w/salmon spread w/bagel) fughetaboutit, I'll eat until the end!   ;D

I avoid carbs too, have you tried riced cauliflower? I love it. It's very close to real rice. Also, the cauliflower mashed potatoes are really good but pricey. If you add some garlic to the cauliflower mash, they are super good.

kantseeback.....W e have been using cauliflower for awhile now. Very good and much healthier than pasta. But I do love pasta! LOL!

One of my favorite all in one dishes, that just so happens to be vegetarian is eggplant parmesan.

If you were never an eggplant fan, make it yourself and you might become one.

Just peel the eggplant skin off, cut it in 1/4" - 3/8" pieces long, dip in egg and I use panko crumbs, then fry in olive oil on both sides - or use your air fryer.

The trick is if the fork without any effort goes right through it, the acid from the seeds is gone, goodbye.

Then tons of marinara sauce, and ricotta, Gruyere / swiss blend, mozzarella and graded parm on top and fresh Italian parsley which isn't bitter, but sweet. 

Just what the cardiologist ordered!   ;D

In previous years (10  yrs ago or more) I made my own pizzas. I would buy frozen dough at the market and leave it in a large bowl overnight to defrost/rise. Then I would make my own sauce from crushed tomatoes etc, the next day roll out the dough on a flat surface with a rolling pin. then assemble the pizza including mozzarella and any toppings I was in the mood for. Home made pizza tastes 100 times better than store bought.
I learned the trick to making a good pizza is to preheat the oven and run it real hot, like 500f.
Hot and fast is the best method for cooking.
